 Fried chicken pieces with bone


Chicken with a delicioys brown, crunchy crust!

Ingredients:

2,5 kg chicken (2 pieces)
20 g rosemary
20 g sage
10 g garlic
10 g red onion
100 g white yoghurt
100 g extra-virgin olive oil
20 g curry
Salt and pepper

Breading:

5 eggs
300 g white breadcrumbs
50 g potato starch
150 g white maize flour
200 g extra-virgin olive oil to fry

Procedure:

Clean and skin the chicken. Cut every chicken in 8 pieces, leaving the bones. Season it with all the before mentioned ingredients and let it marinate in vacuum-packing for 2-3 hours.

Before the cooking, bread the chicken, dipping in the slightly whisked eggs, then in the mixture of bread, starch and flour. Grease the oil and place it on the dedicated pan (see the recommended accessories).

  Once the cooking is done, grease with smoked oil and salt.
