Fried zucchini flowers


A delicious starter

Ingredients:

36 zucchini flowers
36 low-fat cured bacon slices

For the batter:

6 eggs
150 g “1” flour
50 g potato starch
500 g steamed rice
50 g parmesan
200 g beer
50 g basil
200 g extra-virgin olive oil
Salt and pepper to taste

Procedure:

Prepare the batter whipping thoroughly all the ingredients together and 1/2 of the basil finely chopped.
Season rice with the remaining basil, parmesan, pepper and salt. Dip the slightly-floured flowers in the batter, then place them in the pan (see the recommended tools) with some olive oil and put in the oven. Cook according to the dedicated program.

In another pan, brown the bacon slices to 160°C for 3-4 minutes.

 Compose the dish alternating bacon strips and flowers. Garnish with fresh salad, tomato slices and aromatic vinegar.
